L\u2019automne, c\u2019est la saison des ch\u00e2taignes dans les sous-bois et des marrons dans nos cours d\u2019\u00e9cole.<\/p>\n\n\n\n
Tous deux sont prot\u00e9g\u00e9s par une coque piquante et arborent un brun brillant avec une large tache blanche.<\/p>\n\n\n\n
Cette ressemblance peut conduire \u00e0 les confondre.<\/p>\n\n\n\n
Ch\u00e2taigne ou marron\u00a0?<\/h2>\n\n\n\n
La ch\u00e2taigne est le fruit du ch\u00e2taignier (Castanea sativa<\/em>).<\/p>\n\n\n\n
Les feuilles sont allong\u00e9es et dentel\u00e9es\u00a0; les fleurs m\u00e2les forment des chatons jaunes de douze \u00e0 vingt centim\u00e8tres.<\/p>\n\n\n\n
\u00c0 maturit\u00e9, la bogue h\u00e9riss\u00e9e de nombreux et longs piquants se fend et lib\u00e8re g\u00e9n\u00e9ralement deux \u00e0 quatre ch\u00e2taignes, qui se terminent par un petit plumet.<\/p>\n\n\n\n\n<\/figure>\n\n\n\n<\/figure>\n<\/figure>\n\n\n\n
<\/p>\n\n\n\n
Le marron est la graine du marronnier d\u2019Inde (Aesculus hippocastanum<\/em>).<\/p>\n\n\n\n
Les feuilles sont palm\u00e9es, compos\u00e9es de cinq \u00e0 sept folioles ; les fleurs forment des pyramides.<\/p>\n\n\n\n
La capsule verte \u00e0 pointes molles et espac\u00e9es s\u2019ouvre et laisse s\u2019\u00e9chapper la graine, ronde et rebondie\u00a0: le marron.<\/p>\n\n\n\n\n<\/figure>\n\n\n\n<\/figure>\n<\/figure>\n\n\n\n
<\/p>\n\n\n\n
Le marron est toxique, tandis que la ch\u00e2taigne est comestible.<\/p>\n\n\n\n
L\u00e0 o\u00f9 cela se complique, c\u2019est que le terme \u00ab marron \u00bb d\u00e9signe \u00e9galement une grosse ch\u00e2taigne unique dans sa bogue. Castan\u00e9iculteurs et confiseurs n\u2019ont d\u2019yeux que pour cette vari\u00e9t\u00e9, jug\u00e9e plus noble que celle qui servait aussi de nourriture aux cochons !<\/p>\n\n\n\n
Ce marron se d\u00e9guste grill\u00e9, r\u00f4ti, brais\u00e9, en farine, en pur\u00e9e, en cr\u00e8me ou en luxueuse friandise glac\u00e9e.<\/p>\n\n\n\n\n<\/figure>\n\n\n\n<\/figure>\n<\/figure>\n\n\n\n
